Whaley's Market has been a Tampa tradition since the 1930s, serving the highest quality meats, produce and gourmet food available. In the 1980s, I started working in the stores and later in the 1990s I started taking an interest an adding take out foods to what the store offered. In around 2005 I started playing with smoked salmon which was a huge success in the store. After salmon I added pulled pork sandwiches and expanded to include ribs, half chickens and beef brisket.
In 2009, I decided to take my show on the road literally and got into the food truck business. I have 3 mobile BBQ stands that stay put and 2 trailers that handle off site catering.
What makes our BBQ so delicious is the quality of the meat, oak wood smoke, dry rub, and my mom's sauce! Today, we go through 60 gallons of the sauce every week, and it's now sold in 16 ounce bottles at any of the locations. You can bring your old bottle back to the stand and refill it and save some money to.
The last element for savory BBQ is time. If you're in a hurry, cooking barbecue is not for you. We cook the pork and brisket all night long and the rest is cooked in the day light hours. So stop by or give me call!
